I've heard some horror stories from teachers elsewhere in China, and would like to know if, at any point during my employment, my passport will be held by the school?

You'll need to give your passport to the office when you first arrive so that they can help you through the process of registering with the PSB. They will make copies and then return it to you shortly afterwards. You may be without it for a week, 10 days max, when it's at the PSB at the beginning of the semester and then they will return it. I have often traveled around China at weekends, for which one needs a passport. It stays with me in my apartment.
